Enjoy a wee dram of whisky from the Toronto Distillery Company and you'll taste terroir in every drop. Big commercial distilleries run their massive stills continuously to create a consistent, blended product. In contrast, this enterprise produces craft whisky in small batches. The distillery buys its grains from Ontario organic farms and then mashes, ferments and distills them in Toronto's Junction neighbourhood. Each batch is made from a single crop from a single farm, creating spirits as individual as their source. The "grain to glass" approach is reflected in every aspect of the operation - from batch-specific tasting notes on the neck tag to a stringent traceability system that links each bottle to a specific harvest.
