To make authentic mozzarella, you have to start with water buffalo milk. Thanks to five pioneering farmers who have begun raising water buffalo in Ontario, Vaughan-based Quality Cheese has that crucial ingredient. It took plenty of research and even more trial and error, but the fourth-generation cheesemaker succeeded in transforming water buffalo milk into a soft, buttery mozzarella di bufala. Today, Quality Cheese sells its award-winning cheese to national retailers, small boutiques and restaurants across the country. Because it's made here in Ontario, it's fresher and cheaper than imported versions, and it has a smaller carbon footprint to boot. But Quality Cheese hasn't stopped there. With the creation of buffalo ricotta and a third buffalo-milk product currently in development, cheese-loving locavores have even more to celebrate.
