What do you do with one tonne of leftover pumpkins? Ask John Rufa and Trish Dougherty of Kawartha Country Wines. They use those pumpkins, along with an array of flowers, and 100 per cent Ontario fruits and grapes to make dozens of varieties of gourmet jams, jellies, chutneys and specialty vinegars. Diversification is an important part of their success. The winery already produces 35 varieties of wine, all made from Ontario grapes. By branching out with these specialty food items, the winery can now offer a range of non-alcoholic, low sugar/no sugar products that the whole family can enjoy. By buying local produce that has not been sold at the farmers' market, the winery is also helping to support local farmers.
