It takes hard work to make soft cheese. Scott and Steacy den Haan spent four years of research and business planning to realize their dream of running a successful, small dairy operation. Their homework paid off and they now operate a licensed, on-farm artisan cheese plant that has already created five full time jobs on their Markdale farm. The young couple processes fresh cream cheese, feta and curds, all from their herd of 16 Holstein cows. The den Haans control all aspects of production, from farm to fork. They have created a distribution network and also market their products through their website and other social media. Their "Grey Rush" artisan cheese placed second at the 2011 Royal Winter Fair cheese competition, and the couple plans to expand their cheese varieties and establish an on-farm retail store and education centre in the future.
