Food Safety Guidelines for Fish and Fish ProductsIt is important to have all fish food industry employees educated and trained in relevant food safety practices, beyond basic food handler training. The Ontario Ministry of Agriculture, Food and Rural Affairs (OMAFRA) has developed five laminated posters and an explanatory guidebook for each poster that may assist the fish food industry to improve food safety practices in its facilities. The posters and guidebooks describe the good manufacturing practices and safe food handling procedures that will help fishermen, fish processors, truckers and retailers maintain the food safety and quality of fish and fish products from the boat to the retail counter. These materials are a great place to start when you are training your staff on proper food safety practices and procedures. Hard copies of these materials can be obtained by contacting the ministry.
