Food Safety Self-Assessment for Processors

These self-assessments for processors will help determine gaps and opportunities that exist in your facility from a food safety perspective.

Self-assessments are available for the following topics:

  • Personnel and Handling - personnel practices, hand washing, handling and storage of utensils, injury and illness, access and traffic patterns, product handling, chemical control, waste management
  • Cleaning and Sanitizing - cleaning and sanitizing procedures and preoperational checks
  • Water - water treatment and monitoring, water testing, volume/temperature/pressure of water
  • Facility Interior & Exterior, including Pest Control, Preventative Maintenance & Calibration - facility and equipment structure and condition, temperature and ventilation, preventative maintenance & calibration, pest control
  • Recall and Traceability - development of a recall program, conducting a mock recall, development and testing of a traceability system
  • HACCP - development of HACCP plans and CCPs.
  • Validation - obtaining scientific evidence that practices and control measures are capable of controlling food safety hazards (e.g. validating a sanitation program is effective to reduce microbial load).
